Ingredients (for 6 bars):
3 cups unsalted unsweetened popcorn
1 cup whey protein powder
1/2 cup coconut milk (I didn’t use reduced-fat coconut milk but I guess it should also work with reduced-fat coconut milk)
1/4 cup goji berries (or any other dried fruits)
* It may be a good idea to soak the dried fruits you’re using in warm water before. This will prevent them from drying out too much when baking the bars.
1. Make plain popcorn.Then put the 3 cups of popcorn in a resealable plastic bag and crush it with your hands to get smaller bits of popcorn.
2. Mix the protein powder and coconut milk together before adding the other ingredients to avoid lumps. Then add the other ingredients and put the mixture into a baking dish.
3. Bake the batter at 390F for 15 minutes until it is golden-brown.
